The key to a successful mango parfait is that perfectly ripe mango!
Obviously my heart sides with Thai Mangoes, then Alphonso Mangoes and then Ataulfo Mangoes from Mexico which is what I resort to over here! The below were mangos from a recent trip to Puerto Vallarta that inspired this parfait!
But I also know that sometimes you can’t have always have time to create the perfect parfait (and believe me on a daily basis I don’t!) so I have also included a ‘to go’ rendition of this parfait that can be taken on those morning commute subway rides!
But if you have the time, the whole parfait is the way to go!
- 1 Ripe Mango
- 1Tbsp Sugar
- 1 Cup Greek Yogurt
- 1 Tbsp Chia Seeds
- Soak the Chia Seeds in the greek yogurt and leave for a few hours or overnight
- Make the mango puree by slicing the mango, putting all soft pieces in a blender (saving the seed to devour!) with the 1 Tbsp sugar and blend (This can also be done ahead of time)
- Finally assemble the parfait with alternate layers of Greek Yogurt and Mango Puree
- Top with anything you like! I like adding berries for some tartness and granola for some crunch!
