Since coming to San Francisco, I have been involved with setting up a monthly cookbook club. A new cookbook is selected each month and we share the recipes to have a potluck ranging from cuisine based to restaurant based and soon to be kitchen utensil based themes! This month was Huckleberry – Stories, Secrets, and Recipes From Our Kitchen. We have only done dinners up until now so Brunch was a nice change and a chance to try my hand at some bread! Brioche was on the front cover so it was an easy choice and now I know just how much butter goes into a Brioche loaf!!!
A two day process – Day 1 which I did not photograph was forming and kneading the dough which is then refrigerated overnight. Day two consists of preparing the two rounds and leaving them to rice for 3.5 hours!!! Then brush with an egg wash and you are ready to bake!
It will feel hard from the outside, this is just because of the egg wash, when you cut in…
It will be soft soft soft! (Thank you butter!)
Then cut a slice… and enjoy!!!
